He was surprised to learn what the white eggs hanging from a tree were.

On a sunny summer day, John and Sofia walked in the fields near their tiny town. They passed a little tree that drew John’s eye. On closer investigation, she discovered the tree contained little, white fruits she had never seen before. John assumed the fruits were eggs from a bird or mammal, but she finally saw eggplants. The eggplant parmesan was superb, delighting John. The supple, sweet eggplants and delicate flavor went well with the acidic tomato sauce and gooey cheese.
From then on, John visited the area every summer to check on the white eggplant tree. Every summer, it produced its weird and lovely fruit. He would carry a few eggplants from the tree home to prepare eggplant parmesan, a family favorite.
John and Sofia’s discovery of the white eggplant tree expanded their culinary options. John remembered that sometimes the best things are discovered in unexpected locations.
